Blackeye Peas with Jalapenos

A simple and tasty recipe for blackeye peas. Blackeye peas also good cold mixed with salsa and lime juice and eaten with tortilla chips.
Ingredients
- blackeye peas
- chopped garlic
- chopped jalapeno
- chopped onion
Directions
Soak the blackeye peas over night in salted water.
Saute the onions, garlic and jalapenos in oil or fat, then add the beans and their soaking liquid. If desired, add a little cajun seasoning or black pepper. Cook until the beans are soft and serve over rice.
