This is also called "Chana Masala". It can be varied, but this is how I like it best. There are no amounts because it is largely up to your particular taste.

Ingredients

chickpeas
onion
tomatoes, fresh or canned if not in season
cumin
coriander
garlic
ginger
chilies or cayenne
cayenne
turmeric
amchur powder

Directions

First, soak the chickpeas overnight in salted water.

Start the chickpeas cooking while you prepare the rest of the ingredients.

Toast equal parts cumin and corriander in a dry skillet and then grind (in other words, make a masala powder).

Put oil in the pan and saute whole cumin seeds, and asafoetida (aka. hing) if using. Add the onions, and chilies if using, and cook for a few minutes until they soften. Add the ginger, garlic and tomato and cook until the tomatoes begin to fall apart. Add the masala powder and turmeric. Optionally you can also add amchur powder (super-delicious), fenugreek powder and/or cayenne.

Add the simmering chickpeas to the pot, and cook until done. Sometimes I'll add greens and/or coconut milk to this.

This is excellent eaten with chapatis!
