Extra Egg Pancakes

This recipe can be found in Mark Bitman's How to Cook Everything (he's got a website as well), which I much prefer over The Joy of Cooking as an all-around go-to book for American cooking.
These pancakes are made with more eggs than usual, which I like, and the egg whites are beaten to make the pancakes lighter.

Ingredients
- 4 eggs, separated, whites beaten
Wet Ingredients
- yolks from the separated eggs
- 1 cup milk
- 1 tablespoon sugar (more if you like them sweet)
Dry Ingredients
- 1 cup flour (all-purpose)
- 1 1/2 teaspoons baking powder
- dash of salt
Directions
Mix the wet ingredients together and the dry ingredients together, then combine the two mixtures. Fold in the beaten egg whites; they should remain somewhat distinct in the batter. Cook as you would pancakes (lightly brown on both sides).
If you want to add fruit, it's best to add it as a topping, although I do occassionally add a small amount of banana.
