Ginger Miso Dressing

Ingredients
- 1 rounded teaspoon grated ginger
- 1 clove minced garlic
- 1/8 cup water
- 1/4 cup brown rice vinegar
- 1 rounded tablespoon (or more) South River Sweet White Miso (South River Brown Rice Miso is also good)
- 1 tablespoon South River Miso Tamari
- Japanese pepper
- Stevia to sweeten (very small amount)
- 3/4 cup sesame oil
Directions
- Mix all ingredients except sesame oil. Pour sesame oil in a slow, steady stream into mixed ingredients while whisking.
- This recipe makes an excellent fish sauce by omitting the water and reducing the vinegar and greatly reducing the oil. Spread over fish and steam in steamer. Great on artic char and salmon.
