Homemade Pasta

For homemade pasta you can use semolina, but it is best to cut it with some amount of regular flour to reduce its graininess. Or, you can use only regular flour.

You don't have to use a pasta machine if you don't have one. You can simply roll out the dough thinly and cut it with a pizza cutter.

Ingredients

4 cups flour (you can use up to 1/2 whole wheat)
4 eggs
1/2 tsp olive oil

(In other words, 1 egg to 1 cup flour, and a little olive oil.)

Directions

Mix some of the flour with the egg. When it comes together into a dough, turn it out onto a floured surface and knead, adding more flour as necessary to keep the dough from sticking to your fingers. Knead for 6 minutes. Wrap in plastic wrap and let it rest on the counter for 30 mintues.

Roll out and cut into desired shapes, or run through your pasta machine. You can let the pasta dry or not, it doesn't matter. Boil in salted water until desired doneness.
