Roast Chicken

Adapted from a recipe in Le Cordon Bleu at Home[1].
Directions
Make a mixture of butter, olive oil, salt, pepper whatever herbs you like. Stuff this mixture under the skin of the chicken. You can also add garlic to the mixture if you like.
Rub the outside of the chicken with salt and butter only (other oils and herbs will scorch and become bitter).
Truss by tying the legs together to prevent them from flopping about.
Preheat the oven to 375 or 400 degrees. If you want the chicken to brown evenly, put the pan in the oven while it preheats.
Bake the chicken on its side for 20 minutes. Flip to the other side for another 20 minutes, then bake it breast side up until it is done.
