Sweet Peas with Gravy

This is a simple, homey dish that my family makes.
Ingredients
- Flour and oil or butter for a roux
- aromatics, any of the following or a combination, chopped:
- onions
- green onions
- the white parts of fennel
- garlic
- parsley
- mushrooms (optional)
- seasoning such as salt and pepper or Cajun seasoning
- peas (frozen is fine)
Directions
Make a roux, and cook it to a peanut butter color. Add the aromatics and saute until soft. Add everything else except for the peas, and add some water or stock and simmer until the aromatics are cooked to your liking. Add the peas and cook until done. Serve over rice.
